Air Fryer Roasted Potatoes with Lemon, Herbs, and Garlic
Tender roasted baby potatoes cooked in the air fryer with olive oil, garlic, and herbs, then finished with lemon juice for a fresh, weeknight-friendly side dish.
Instructions
Chop baby potatoes or Yukon Golds into bite-sized pieces. In a bowl, toss them with a small drizzle of oil, minced garlic, dried or fresh herbs (like rosemary, thyme, or Italian seasoning), salt, and pepper.
Air fry at 380°F for 15 to 18 minutes, shaking the basket halfway, until the potatoes are tender inside and browned on the edges.
Right before serving, squeeze fresh lemon juice over the potatoes and add a little extra sprinkle of herbs.
