Crispy Cauliflower Tacos with Lime Slaw

If you want a fresh twist on Taco Tuesday, these air fryer cauliflower tacos are such an easy win. Spiced cauliflower and zesty lime slaw keep things light but seriously flavorful.

Instructions

  • Toss cauliflower florets with a drizzle of oil, chili powder, smoked paprika, garlic powder, and salt until evenly coated.
  • Air fry at 375°F for 10 to 12 minutes, shaking the basket halfway, until the cauliflower is browned and crisp on the edges.
  • While the cauliflower cooks, make a quick lime slaw by tossing shredded cabbage with lime juice, salt, pepper, and a spoonful of vegan mayo.
  • Serve the crispy cauliflower in warm tortillas with the lime slaw, avocado, and hot sauce.

Notes

These tacos are great when you want something light but still crave crunch and bold flavor. You can also turn this into a bowl with rice or quinoa if tortillas are not on the menu, and leftovers reheat nicely in the air fryer.
