These mini lentil “meatloaf” bites are like a lighter, veggie-packed version of classic comfort food, perfect for picky eaters and weeknights when you want something familiar but plant-based.
Instructions
Combine cooked lentils with very finely chopped carrot, onion, and bell pepper. Add breadcrumbs, tomato paste, garlic powder, onion powder, salt, pepper, and a splash of soy sauce or tamari.
Stir until the mixture holds together but still has a little texture. If it feels too dry, add a tablespoon of water. If it feels too soft, stir in a bit more breadcrumbs.
Shape the mixture into small, muffin-sized bites and place them in a single layer in the air fryer basket. Air fry at 375°F for 8 to 10 minutes, until the outside is firm and lightly crisp and the centers are warm and tender.
Brush the tops with ketchup or barbecue sauce before serving for that classic meatloaf flavor.
