Instructions
Slice zucchini into even rounds so they cook at the same rate. In a shallow bowl, mix breadcrumbs, garlic powder, Italian seasoning, salt, and dairy-free parmesan.
Lightly press each zucchini round into the breadcrumb mixture, coating both sides, then arrange the rounds in a single layer in the air fryer basket.
Air fry at 375°F for 8 to 10 minutes, flipping once halfway through, until the rounds are crisp and golden on the outside and tender in the center.
Serve warm with marinara sauce or plant-based ranch dressing for dipping.
