Pineapple Breeze Fizz Mocktail

When I want instant “vacation energy” without leaving the couch, this is what I make. It is bright, pineapple-forward, and takes almost no effort.
Yield: 2 drinks

Materials

  • Pineapple juice — 1½ cups
  • Fresh lime juice — 2 tablespoons
  • Sparkling water — 1 to 1½ cups chilled
  • Ice
  • Pineapple wedges or lime wheels for garnish
  • Fresh mint or basil sprigs for garnish

Instructions

  • Fill two glasses about two-thirds full with ice.
  • In a small pitcher or measuring cup, stir together the pineapple juice and fresh lime juice.
  • Divide the pineapple-lime mixture between the glasses.
  • Top each glass with sparkling water and gently stir once or twice so you keep the bubbles.
  • Garnish with a pineapple wedge or lime wheel and a sprig of mint or basil. Serve right away.

Notes

For a more layered, grown-up flavor, add a small splash of alcohol-free spirit before topping with sparkling water. If the drink tastes too sweet, squeeze in extra lime. If it feels a little flat, use very cold juice and sparkling water so you do not need too much ice and the flavor stays strong. This one scales easily for friends and fits right into your easy, tropical hosting routine.
